Mmmmmmm Sponge Toffee
Before I actually made it, I thought it was one of the most daunting recipes in the kitchen. Boil sugar and corn syrup to 300 degrees Fahrenheit and then quickly stir in baking soda. Really simple but kind of scary because it foams up pretty quickly as I stir stir STIR!!!
And then quickly pour it into the waiting pan.
That it’s a simple quick and dirty recipe doesn’t mean that it’s not easy to mess up. The first batch of the day I heated too quickly and then ended up with a burned batch.
So I got to do it twice… in a row.
It’s a fun recipe to make and I get inspired every time that I do get to make it. Thinking of all of the possibilities to flavour it.
….. what about dried strawberries. What about a series using maple syrup in one and agave in another and… and… and…
And I remember that I’m doing this for work. And this batch is plain. And I get to dream of my own confectionery shop for some other time.
