In the body, dietary carbohydrates, including sugars and starches, are converted into glucose, which, as you know, transmits the pancreas to release insulin into the blood. Carbohydrates - not dietary fats - are the primary cause of weight gain.
There is one very interesting thing; Certain vitamins, especially vitamins A, D, E and K, require fats to be properly absorbed into the body, which is why dietary fats are needed to carry these "fat-soluble" vitamins. These vitamins are not soluble in water, they can be absorbed only from the small intestine, in combination with fats. Deficiencies caused by the incomplete absorption of these vital vitamins are serious and can be associated with brain disorders, among others.
In the case of vitamin K deficiency, snowy blood clots when you are injured and you may even suffer a spontaneous hemorrhage.
In the absence of vitamin A, your brain will not develop normally; you will go blind and become extremely vulnerable to infections.
Vitamin D deficiency is associated with an increased risk of chronic diseases, including schizophrenia, Alzheimer's, Parkinson's, depression, sensory disorders, and a number of autoimmune diseases, such as type 1 diabetes.
