"This Is It, Pancit - Long Life Noodles"
PANCIT - is a Filipino cuisine which was early introduced by Chinese Filipino settlers. Pancit are noodles which can be Bihon (rice noodles) or Canton (flour noodles) or mixed both (Pancit Canton at Bihon Guisado.) It has a medley of ingredients of both pork and chicken, pan-fried shrimp, and a mixed of vegetables like cabbage, carrots, Baguio beans, among others. Adding squid balls, kikiam, and quail eggs is optional. Most of the Chinese restaurants always had this Pancit on their Menus being served as Merienda or as side-order amongst main courses. Expect Pancit also to be always present during Fiestas, Christmas, New Year's Day, and most especially when there is somebody celebrating his or her Birthday. Pancit for Long Life as they say, but prayer for thanksgiving and more Birthdays to come must always be a priority. Going to church and talking to God that is....
