PANCIT - is a Filipino cuisine which was early introduced by Chinese Filipino settlers. Pancit are noodles which can be Bihon (rice noodles) or Canton (flour noodles) or mixed both (Pancit Canton at Bihon Guisado.) Adding squid balls, kikiam, and quail eggs is optional. Most of the Chinese restaurants always had this Pancit on their Menus being served as Merienda or as side-order amongst main courses. Expect Pancit also to be always present during Fiestas, Christmas, New Year's Day, and most especially when there is somebody celebrating his or her Birthday.
