Tortang talong is an eggplant omelet where the grilled eggplants are soaked in a beaten egg and then fried in a hot pan with a boiling vegetable oil. This is a simple yet delicious filipino dish that is best eaten with rice and banana ketchup. I recommend this dish to everyone who have a limited time to prepare because it only takes few easy steps to complete.
