Do you want to create a coin or a token? I remember a few years back there was a guide for creating your own coin, based on the same tooling as the likes of Doge etc. On the Ethereum page, there a section on "DESIGN AND ISSUE YOUR OWN CRYPTOCURRENCY" which takes you to this page and stuff to follow. If I was doing something, I would probably go down the ERC20 token route on the Ethereum BlockChain leaving all the infrastructure worries to the foundation.
