Online Dice games are scams 99% of the time
Online dice games often claim to be "probably fair" games of luck. But luck has little to do with how these things work. The game is designed to be fundamentally unfair to users. The more a dice game is used, the more money the owners make.
Plenty of dice games are outright scams. We recently had a Steem based Dice game exit scam with 500k Steem. It was called Magic dice and was run by the creator of Dmania.
It is important to note that @steemit that is, Steem Inc used to support Dmania with large delegations. Steem Inc's lack of vetting is a major concern as they have supported scammers or shady businesses more than once. Steem Inc supported Dlive and they exited from Steem.
Back to dice games. These games are unfair because the house generally will always have more funds to play with. This is why, games are often designed to be fair to users with a lot of funds and unfair to users who will play less. Even the ones that claim you can "verify" the number and stuff, it isn't hard to doctor results if the verification method isn't fully transparent.
I know of only one game that has a fully transparent system of verification. Steem Dice but it is now out of service. That's why, I think it isn't wise to play a game when the chances of fraud is very high. Also, the people who run these sites generally stay anonymous. Even if they exit scam investors, there is nothing for the investors to do. That's why it is best to avoid these sites.
I don't follow most of these, but I am curious, how exactly were they cheating users? I would assume all of the gambling games have a "house edge", just like an ordinary casino. If they didn't, they would quickly go out of business. That isn't cheating though, that is the business they operate.

Their are some sites that claim to be provably fair but infact deploy mechanisms and functions which can cheat the user. Dice games by design are meant to make the operators money, this is why they have a house edge or odds built in their favour. This however doesn't mean that all sites are cheating their users out of their winnings.
I agree with you that the games have to be 100% transparent in allowing users to audit their bets to ensure they aren't being cheated. This is just good business practice and nobody should play on sites that do not allow users to verify their rolls.
The bankroll on Steem-Roller.com is actually funded by community members, anyone can invest or divest as they wish, with up to 50x leverage on their investments. While many site operators do remain anonymous due to concerns of the legal grey area that casinos operate in I've made a fact to let people know who I am.
You raise some good concerns here, however not all sites are run by shady scammers. in fact their are sites out there such as cupz.io and my own site that are run by good people.
