EASY Vegan QUARANTINE COOKING Ideas (part 1) - Sweet Chili Rice & Vegetables

Need some inspiration during these crazy quarantine times? Here is an easy vegan qaurantine cooking idea: Sweet Chili Rice and Vegetables. I also share some tips on what to buy and store in the pantry and fridge when shelves can be empty in grocery stores or at least unpredictable. This is a paired down, simple version of my Sweet Chili Rice and Vegetables(original recipe in my cookbook Be Vegan - Skip the Diet, Just Eat Healthy: www.veganmichele.com/ebook). You can make substitutions as needed depending on what you have on hand. I want this information to be helpful and useful to you during these unpredictable times. Please stay safe and be healthy. SWEET CHILI RICE AND VEGETABLES THE SIMPLIFIED VERSION (original recipe in my cookbook Be Vegan - Skip the Diet, Just Eat Healthy: https://www.veganmichele.com/ebook)

INGREDIENTS:
1 cup rice of your choice
3 to 4 cloves of garlic (chopped)
1/4 of a small red or white onion (sliced lenghtwise)
1/2 red bell pepper (chopped)
1 tbl lemon juice
2 tbl rice vinegar
black pepper to taste
whatever veggies you have on hand (frozen or fresh) think things like mushrooms, cabbage, broccoli, zucchini, carrot etc.
1 can black beans (drained and rinsed)
small handful of cashew or peanuts (chopped)
desired amount of sweet chili sauce
desired amount of sriracha
1/2 lime for garnish

  1. Cook rice according to package directions.

  2. Water or vegetable broth fry garlic, onion, and bell pepper 3 to 5 minutes.

  3. Add rice vinegar, lemon juice, and black pepper. Add your veggies and black beans. Sauce for another 3 to 5 minutes.

  4. Add in sweet chili sauce and nuts. Cook until you reach your desired consistency.

  5. Combine rice and vegetable mix. Feel free to garnish with lime juice and sriracha if desired.

Serves 2 to 4.

*NOTE: This recipe can be easily adapted to fit whatever you can find in these limited grocery times. Be safe and healthy xx
