Hi @atmemestable and welcome back for season three! Wow, you went all in on the root veggies! I love that. It is a shame that root vegetables are often overlooked for other vegetables like asparagus, green beans and zucchini. The root veggies have such great flavor. Your risotto looks so delicious and I like how many other roots you added to the dish. This risotto must of had such a satisfying and complex flavor.
