Taco lasagne, a quick easy meal for kids
My eldest loves tacos but I hate the mess that I need to clean up afterwards, after trying the different wraps, tacos and taco bowls. We now like taco lasagne and it is even good for the little ones to eat with minimal mess this way.
So basically make your favourite taco mix as you normally would. I start with a 1kg fine mince meat and two large onions chopped finely, heated in a large frying pan. Add corn kernels when mince meat is nearly all browned and finish cooking.
Drain oil from pan and add seasoning mix and one cup of water, allow to simmer for around 6-10minutes more.
In a large backing dish line with San Reno instant lasagne sheets, sprinkle lightly with shredded cheese and mild salsa. Drain any excess water from the mince meat and place a thin layer over the pasta sheets in the bottom of the baking dish, top with more salsa.
Repeat another layer of mince and top of with pasta sheets sprinkled with salsa and shredded cheese.
Bake for about 35 minutes as packet of pasta sheets recommends, serve up and enjoy. I like a little bit of sour cream added to my serving though the kids like it just as it is.
