The Best Recipe for Chili Tiger Prawns Ever!
Hi all! I've tried and tweaked many recipes and have determined this is the best recipe for Chili Tiger Prawns (Ebi Chili in Japanese). If you try it, please let me know what you think. Happy cooking!
Ingredients:
• 250g prawns, peeled, deveined and washed in 1 tbsp potato starch to remove smell
• salad oil
Marinade:
• ¼ tsp salt
• white pepper
• 1 tbsp sake
• 1 tbsp potato starch
Chili Sauce:
• 1 nub ginger, grated
• 2 cloves garlic, minced
• 1 white part of scallion/green onion, sliced
• 2 tsp doubanjan (Szechuan sauce)
• 2 tbsp ketchup
• ½ cup chicken stock or water
• 1 tbsp sake
• 1 ½ tsp sugar
• 1 tsp sesame oil
• 2 tbsp water
• 1 tbsp potato starch
Preparation:
Add marinade to prawns.
Heat oil in frying pan, add prawns, cook until colored on both sides and remove from pan.
Add more oil and saute ginger and garlic.
Turn heat down and add doubanjan and ketchup.
Add chicken broth, sake and sugar.
Simmer for 2 minutes.
Add prawns and scallions and cook for 2-3 minutes.
Add sesame oil and starch/water mixture.
Stir well, remove from heat.
• Serve with rice or noodles, salad and vegetables. Enjoy!
