[Lemon Mayo Shrimp]
Fried shrimps are usually served with sweet-sour chili sauce, but this time, try something new. Fried shrimps with sweet and fresh lemon mayo dipping. Unlike Chili shrimps, dipping is served on side, you can enjoy crispy taste fully. To cook safely, don't forget to remove uropod when you prepare shrimps!
3~4 servings
20 shrimp
1 egg
1/2 cup potato starch
1 cup bread crumbs
Some parsley
1 tablespoon lemon juice
1 tablespoon rice wine
1/4 teaspoon salt
1 pinch black pepper
5 tablespoons mayonnaise
3 tablespoons lemon juice
2 tablespoons sweetened condensed milk
1 tablespoon honey
STEP 1) Prepare shrimps at fist. Cut head of shrimps. Cut along the back side of each shrimp and remove the shell. Remove the vein, digestive tract, and uropod but leave the tail.
Season to taste with lemon salt, pepper and lemon juice, resting for 10 min, and remove the moist with kitchen towel.
STEP 2) Dip shrimps into potato starch, egg mixture, and bread crumbs in order to coat. Heat the oil in a deep-fryer to 170℃. Drop each shrimp and fry.
STEP 3) To make shrimps crispier, fry one more before serving.
STEP 4) Combine all the sauce ingredients in the bowl, and mix. Serve the sauce with shrimp.
