How to Make Swiss Steak
Here is a recipe for Swiss Steak that you can try:
Ingredients:
2 tablespoons flour
1 (2 to 2 1/2 pound) round or top round steak, about an inch thick
Kosher salt and freshly ground black pepper
3 tablespoons extra virgin olive oil
1 onion, roughly chopped
1 clove garlic, chopped
2 teaspoons each fresh thyme, sage, and marjoram, or 1/2 teaspoon each dried
2 cups puréed tomatoes (canned or fresh)
Vegetables such as potatoes, carrots, or green beans, optional
Instructions:
Rub flour into both sides of the steak. Sprinkle with salt and pepper.
Heat 2 tablespoons of oil in a wide, shallow pan (with a cover) to medium-high heat. Place the steak in the pan, and cook for approximately 10 minutes on each side, enough to brown the steak.
Remove the steak from the pan and set aside.
Sauté the onions and garlic in the same pan until they are soft and translucent.
Add the thyme, sage, and marjoram to the pan and stir for a minute.
Pour in the puréed tomatoes and stir to combine.
Return the steak to the pan and spoon some of the tomato sauce over it.
Cover the pan and simmer for 1 1/2 to 2 hours, or until the steak is tender.
If you want to add vegetables, you can cook them in the tomato sauce alongside the steak.
