Vanilla Coconut Panna Cotta Recipe

My daughter is visiting this week and so to celebrate I've gotten into the kitchen to make her some panna cotta. This recipe is a variation on the traditional Italian recipe that uses coconut cream and milk.
Ingredients:
- 2 cups of coconut milk
- 1 tablespoon of gelatin
- 1 can of coconut cream
- 1/3 cup of rice malt syrup
- 1 teaspoon of vanilla bean paste
Procedure:
- Place coconut milk and gelatin in a pan and gently stir over a mild heat.
- Stir until the gelatin dissolves but do not let the mixture boil.
- Add in the coconut cream, rice malt syrup and vanilla bean paste.
- Stir the mixture and allow it sit and cool for 10 minutes.
- Pour the mixture into ramekins and cover the ramekins with glad wrap.
- Place the ramekins into the fridge for at least 5 hours to set.
