Vegan Chilli
Whipped this little bowl of vegan chilli up yesterday afternoon, very delicious and nourishing. Thought I'd share!
You will need:
4 cloves of garlic
1 red onion
1 tablespoon of cumin
1 tablespoon of smoked paprika
1 can of kidney beans
2 tablespoons of tomato paste
The insides of 3 tomatoes
2 zucchini
1 green capsicum
2 tablespoons of chopped, roasted red peppers
3 large mushrooms
and of course, 1 chilli, leave the seeds in if you like spice, or keep them out if you don't.
Heat up the pan with some olive oil, once hot - place in onion, garlic, chilli and spices.
Add peppers, tomato paste, tomatoes, and zucchini.
Add beans, and bring heat up.
Once beans are cooked through, add your mushrooms and season with salt and pepper.
Stir through and allow mushrooms to soften and shrink.
Then you're done.
Serve with brown rice, or some bread for a hearty and spicy meal.
