Pancake Making - 4 March 2025

Yesterday there was a post by @jen0revision about pancake making here. It was a review of a ready made pancake mixture bought at Marks and Spencer’s (M&S) really cheaply. The post tempted me to have a go and making my own pancakes from scratch today using a recipe by Delia Smith that I found on the BBC website here.

The recipe varies a bit from what I normally do because it adds some water to the milk and melted butter at the end to stop the mixture from sticking. I did just that and to make it totally ‘fool-proof’ I also used a Teflon frying pan.

Cooking on an induction hob has been a bit hard for me because I find that if I use the normal metal frying pan, things stick badly so Teflon had to come to my rescue. Also, normally my first pancake is a total disaster but with this (buttery) recipe I even managed to eat the first one.

I will not give you the full recipe as you can find it following the link above. I will only comment that the recipe gets you to melt 50g of butter but then in the recipe you only use two table spoons' worth. There’s a lot of melted butter left so you need to use that up on the pan instead of a bit of oil - I normally just use oil rather than butter but this time I followed the recipe.

I varied the ‘temperature’ between 140 and 180 and had no issues burning the mixture : the pancakes cooked well on both sides :

I didn't dare to flip them over.

The recipe yielded 9 pancakes comfortably which were shared fairly amongst those present. I went for sprinkling sugar and then lemon juice on the two I had.

Melted butter is also used in this recipe.

I enjoyed making the pancakes but they looked a bit pale and reminded me a bit of a wrap in comparison to the pancakes made by @ jen0revision which were American Style, ie smaller and fluffier.
