== How to prepare the Mahjab ==

Al-Mahajab dish is one of the oldest Algerian dishes that are still prepared to this day and are very popular not only in Algeria but in many Arab countries & In some Western countries. the preparation of the winepresses has spread because of the many nutritional benefits it contains. It consists of a dough made of flour and semolina, stuffed with cooked vegetables and coated with olive oil.

_Ingrédients:
Cup and three quarters of flour.
A cup of fine semolina .
Cup and three quarters of warm water.
Small spoon of salt. Vegetable oil.

_the filling:
Three tablespoons of olive oil.
Century, medium size of warm red pepper.
Four large onions.
Two large tomatoes .
Garlic cloves.
Two pieces of green turkey pepper.
A piece of red turkey.
Tablespoon of ready-made tomato sauce.
Half a teaspoon of black pepper.
A pinch of salt as desired.
Minced meat fried in oil.

== How to prepare ==

1)- the dough:
_Place the semolina, flour and salt in a large bowl and stir well.

_Start by gradually adding warm water to the flour and semolina, and continue kneading, until a solid paste is obtained and knead for ten minutes (in this step we may need to add more warm water or reduce the amount of water used depending on the type of flour used).

_Leave the dough to relax for an hour.

_Cut the dough after resting to the pellets of the right size, and put a little vegetable oil on its face so as not to stick, and cover with plastic paper and leave it to rest again.

2)- the Filling:
_ Sprinkle the hot red pepper with garlic and salt well.
_Put the amount of olive oil in a hot pan, and put the hot red pepper and garlic puree on the hot olive oil and stir.
_Cut the onions into slices and add on the pan and leave until it withers.
_Place the chopped tomatoes with green pepper and red section into cubes on the onions, add the black pepper and toss.
_Leave the vegetables on the fire to ripen, and cover the pan.
_Put the tomato sauce and move the mixture without cover until the liquids evaporate and get a cohesive padding.
_Bring the dough, then place it on the vegetable oil, then knead it with your hands until you get a thin paste.
_Put two tablespoons of filling inside the dough,and the minced meat and some cheese , and wrap it over the filling like the envelope.
__then prepare a sheet or pan that can not be glued to the fire, then put the cutters in the pan and reduce the fire, and then leave it until brown on both sides on low heat.

Place the mantle in the serving dish, and serve it directly.
