我的农村生活——美味的鸭肉和养鸭的烦恼

现代科学的规模养殖技术使各种肉类的价格趋于低廉,尤其鸭腿肉市场价每斤仅4元,鸭脚12元,其它部位无售,也许是深加工了。

鸭腿肉的味道口感并不错,只要保持品质的新鲜一样可口。刚买来的鸭肉须立即放入冰箱保鲜,食时再取。红椒炒鸭肉,红烧炖鸭肉都是一道不错的菜肴。

鲜鸭腿肉

红椒炒鸭肉我先把鸭肉剁开约2厘米小块,放热锅中炒至冒油后加水煮约十分钟,捞出沥干。再把切碎的红椒(何种切法都可)放油锅中加盐猛炒至辣椒柔软再放入鸭肉稍炒片刻即加水煮,把佐料味精、豆油(土产品)姜末放入沸后即可出锅,一盘可口的红椒炒鸭肉就成了。

这道菜要求味道不能浓厚,以保证其原味鲜香。红烧鸭肉即把新鲜鸭腿剁开4厘米大块放压力锅内炖烂,把汤搁出不用,肉放油锅中稍炒加盐味精,豆豉油,鸡精,姜末即成出锅,这道菜调料稍多,使味道浓香,无异味。

红椒炒鸭肉

农村散养的鸭肉与圈养的味道大有区别,杂食性的喂养肉质更细腻,脂肪少气味香。小时候家里养过一群鸭,那都是地方品种,个比较小,约三斤左右,二三月买回来鸭苗,小鸭毛茸茸的背上四个黑点俗叫四点鸭,非常活泼可爱,老爱跟人走,还"咻咻"不停地叫。鸭子特喜欢吃蚯蚓了,而且生长更快,当我一拿起锄头去掘蚯蚓时便会紧随其后,争抢着吃。

小鸭一个来月时开始长羽毛,可以放进河里让其自由觅食。晚上它们会找到家里来过夜。到七月鸭子便长大并生蛋了,一晚一个,还有只母鸭头上长出一撮茸毛来,活像只孔雀,我们都叫它锥脑(头)鸭,在河里时一眼便能认出是谁家的。

到第二年夏季,有一天鸭群蹧踏了别人河边田埂上的稻穗,就用和了农药的谷子把鸭子全毒死,旁边有稻田的河里不能放鸭,家人竭尽心力的劳动瞬间成空,从此我家再也没有养鸭子了,也没有美味的土鸭肉吃了。
