Homemade nougat 自制牛轧糖

Nougat has always been my favorite, remember that before the school, often buy nougat to eat, eat each time can not stop.This time I made peanuts, almonds, walnuts, cranberry four flavors of nougat.I took it as a gift to friends and family.

牛轧糖一直是我的最爱,记得以前上学时,经常买牛轧糖吃,每次都吃的停不下来。现在家里有小朋友,为了孩子的牙齿健康,我做牛轧糖的次数很少。偶尔做一次会做很大的量,再过不久就是中秋节了,我这次做了四种口味的牛轧糖,就当是节日礼物就给亲朋好友。要想牛轧糖做的好吃,首先要选择最好的材料,然后就是煮糖是关键,这是需要反复实践的。我做了花生、杏仁、核桃、蔓越莓四种口味的,其它的料也是提前准备好,不然在煮糖的时候手忙脚乱的。

material:
Marshmallow or maltose
White sesame seeds, black sesame seeds
butter
White sugar
Peanuts, almonds, walnuts, cranberries

材料:
棉花糖或麦芽糖
白芝麻、黑芝麻
黄油
白沙糖
花生、杏仁、核桃、蔓越莓
做法:
1.备好材料,花生米用烤箱180度,烤15分钟后拿出来装保鲜袋去皮。
2.煮糖是关键所在,牛轧糖的软硬度也跟煮糖水有关,温度低的糖软易融化,温度高的糖口感变差,很硬。把白沙糖、麦牙糖一起放不粘锅里大火煮至150度离火(必备食品温度计),加入黄油搅拌至融化。关于温度的问题,温度超高糖的口感越硬些。
3.把花生、芝麻立即倒入煮好的糖浆里,用木铲迅速拌均匀,可以用硅胶垫揉制一会儿,可以去除糖内的气泡,用烤盘垫油纸擀出你满意的厚度,当温度降至手温时,糖不粘手即可。
4.用锋利的刀具切块,完全冷却后,包装入袋,再配个漂亮的盒子,送人很有面子的。
















这次还多做了些阿胶糖,做法和牛轧糖一样,貌似也不错。
