Homemade cheese cake easy way!!!

Today I will give you my hands-on experience on how to make light cheese cake at home. It's easy and interesting and you can have lots of fun at home.

Food Materials:

Whole egg ×3
鸡蛋3颗

Philadelphia cheese cream 125g
这个牌子的起司 125g

Light cream 50g
淡奶油 50g

self-raising flour 33g
低筋面粉 33g

sugar 50g (you can reduce the amount of sugar if you don't want to gain weight lol)
白砂糖 50g (可以根据甜度酌情减量哦)

6-inch demolding cake pan
6 英寸脱模烤盘

Let's get started!
开始吧!

Step 1
Separate your eggs, egg white in a bowel and egg yolk in another one.
Except egg white and sugar, mix everything together and blend homogeneously with a mixer.
蛋白蛋黄分离,无油无水的容器,把除掉蛋清和糖的其他所有成分混合然后打匀。

Step 2
Use a mixer to whip the egg whites, add a few drops of lemond juice or white vinegar, then add the 50g sugar in 3 additions, whip until stiff peaks form.
打发蛋白,这一步很关键哦!打发前加几滴柠檬汁或者白醋,分三次加入糖直到出现直挺的尖脚。

Add 1/3 sugar first
出现鱼眼泡时加入1/3的糖

再加入另外1/3糖

Add the rest of sugar
把剩下的糖全部加入,最后打发成这样子就ok了

This step is very important. Mixed 1/3 of your egg white first into egg yolk, and draw “U” instead of stirring. Then mix another 1/3 of white into egg yolk, and add the mixture into rest of the egg white.
这一步也很关键,蛋白霜和蛋黄混合。为了避免消泡,先将1/3的蛋白混入蛋黄,划“U”型而不是划圈哦,切记切记。再加1/3蛋白霜,然后将混合的倒入剩余的蛋白霜中。

Put all the mixture into the mold. Shake it to get rid of big bubbles.
Take a look of the pan, I used aluminum film to wrap the bottom of mold and put into a pan with water. The film is used to block the water during baking.
将混合的物料放入模子中,把大气泡震出来。记得在模子外围提前用锡箔纸包好,然后放在一个烤盘上,里面要加点水哦。锡箔纸可以有效的阻隔水进入糕体。

Step 6
Put them all in the oven. Set temperature 120C for 100C, and increase the temperature at the end of the process to make the surface a brown color.
将蛋糕放入烤箱,120C烤10min,最后阶段可以适当升高温度给表面上色。

Step 7
Take the cheesecake out and cool it down. REMEMBER, DON’T EAT IT NOW!!! Put into the fridge at 4C overnight.
取出cheesecake然后冷却,现在还不要着急吃哦,要在冰箱里冷藏过夜口感才会更好。
