How to boil crawfish Louisiana style

Hi, my name is Andy with Backpacking Diplomacy.com. Today. I'm going to teach you how to boil Crawfish, Louisiana-style. Most people use a setup something like this. Usually consists of a pot, a basket, and a heat source such as a propane tank. The first stage in any crawfish boil is the purging stage. Due to the fact that crawfish live in the mud, they're usually quite dirty and need to be cleaned thoroughly before cooking. Once the crawfish have been placed in a bucket you add water and salt to begin the cleaning process. Once the bucket has been filled with water and salt has been added, the crawfish we usually see in this process for up to an hour or two I think that it would be safe to say just like most Cajun cuisine, no two families have exactly the same recipe. In my family or the crawfish are purging, we typically cook corn, potatoes, onions, and garlic.

Sometimes mushrooms and even sausage in the same water that we used to cook the crawfish Once these items have been fully cooked, we take them out and place them in a pot so that they can be eaten later with the crawfish After the purging process is complete we add the crawfish to the basket and then place them in a boiler. Typically the cook waits for white smoke to rise from the boiler. Usually this means that the water is boiling. From this point, they will wait three to five minutes with a crawfish to be completely cooked. Once taken off the boiler, the crawfish are typically placed in an ice chest until they are ready to be eaten. Now for the fun part! It's time to eat.
