Boiling point
This is due to the sudden contact of the liquid with a surface warmer than its boiling point.

At the time, the droplets form a small amount of steam layer and instead of boiling quickly, it bounces over the hot surface protected by the insulation provided by this steam. This is called the Leidenfrost effect.
Since steam forms in the region where the droplet touches the hot surface, it rises instead of adhering to the surface, due to the gap formed under it. This results in either floating on the surface or jumping.

So in short; It is strange and fun to watch if a liquid comes into contact with a sudden heat higher than its boiling point.
