GUESS WHAT I ATE FOR DINNER?
Good morning everyone. Thank God it is Friday and almost the end of the month of August. Is it just me or this month dragged a little too long? Anyway it would so be all over. I'm ecstatic it is weekend but I am not here to talk about the weekend or the month about to his us farewell.
I know I have done food posts before but in various manners and today I am going to be talking about what I ate last night. Yeah! I kept saying I travelled to meet momma and she has been taking really good care of moi....lol. So, last night, momma decided we eat moi moi (bean pudding). Moi Moi is a Nigerian delicacy which can be eaten at any time of the day. It is very rich in protein and can be combined with different foods like pap, rice, spaghetti etc.
Moi Moi is made from beans and so has all the nutritional values of beans. Let me walk us through on how we make our own moi moi in my house. I know people have different ways of making theirs but before I do so, permit me to list the ingredients.
INGREDIENTS
- 2 Cups of beans
- Ball Pepper
- Scotch pepper
- Tomatoes (optional)
- Onions
- Crayfish
- Fish or Egg (optional)
- Spices
You see? Actually not much ingredients and it is very affordable.
METHOD
●. Soak the beans in a bowl of water for about 40minutes to make it soften and easy to wash. Once soft enough, wash the beans peeling off it's skin until it is clean and soft enough to be blended. Rinse twice to ensure no skin is left on the beans.
●. Pour the soft beans into a blender, add your pepper, tomatoes, onions and blend all together adding little water at interval until a smooth paste is achieved.
●. Pour the blended paste into a bucket or a bowl as the case may be. Add a little water to ensure conformity. Add groundnut oil into the bowl and turn it carefully. Slice some onions and add into it. Slice some tomatoes and add into it if you care. Add blended crayfish and then add Maggi and salt to taste. Tie the moi moi in nylon according to the size you want or in a plate with cover or wrap it in leaves although we used nylon for ours.
●. While mixing the ingredients, place a pot on fire and place old newspaper in it. ( I wouldn't know why mummy uses newspaper but I guess it performs the same function as the plantain leaves used by others). Pour water into the pot and let it boil.
●. Place the tied moi moi into the boiling water. Cover the pot and allow to cook for 45 minutes. Once the moi moi is cooked, you can percieve the aroma. Bring down the pot from the fire and remove the moi moi from the water. Allow it to cool off a bit so as to be a bit hardened. This is for easy extraction from the nylon.
You can serve with any type of rice, custard, pap, plantain, spaghetti etc. Moi moi is easy to make and affordable. Last night we ate ours with pap and yes it was yummy.
