What's For Lunch?

in #blog7 years ago

Some friends suggested it might be interesting to share some of our favorite meals. We are lucky to live in Panama's Chiriqui Province where so much fresh produce is grown. There are markets and vendors all over town, and our veggie guy knows what we like, picks out the freshest and best he can find, and brings it to our door every week. I have fought a life long battle with my weight so it’s important that I eat right, and fresh veggies are a big part of that.

Todays lunch is tuna salad. You can add or change anything you like but this is my usual mixture – celery, cucumber, tomato, mayonnaise, tuna, and limón.

Limón (lemon) can mean many things here. There are little green ones that look like key limes, bigger green ones that seem to be regular limes, green ones like this that are orange inside, sometimes with gray/brown odd looking patches on the skin, and yellow ones bigger than grapefruits to name a few types. The only ones I haven’t seen outside of Pricesmart are the yellow ones we are familiar with in the US. But, whatever type happens to be in my kitchen I want limón on my tuna salad because I think it tastes wonderful. My favorite are these green ones with orange interiors.

Here we are ready to mix it up. The cucumber was huge so I only used half. I also have avocado in the freezer I should get out. When they thaw they are soft and can be used with or instead of mayonnaise.

Let's eat!

That's so cool that you have a veggie guy who brings produce to your door! That's what I need. Then I'd never have to go to the market here on Fridays! ;) I have never been a fan of mayo, so having avocado as a sub sounds like a good idea. Lemons/limes are crazy here. Oranges too. Sour, sweet...we just found mandarin oranges growing in our neighborhood!! Tiny amount of orange, 2 huge seeds in each segment. We also have lemons, sour oranges and who knows what else. One lemon tree is really yummy - lemonade quality. If you're ever up in this area, we should meet up!!

The veggie guy was just driving around with his loudspeaker, I flagged him down and it was a start of a nice friendship.
Yeah, citrus here is interesting. Have you been down that windy road between Cuesta de Piedra and Dolega? I was surprised to see all the orange trees there! I suppose if they are for sale everywhere they must grow somewhere.
There is always some new strange fruit to try, makes life interesting 😄
I'll let you know if I plan to head up your way anytime.

Looks delish! Thanks for sharing! #drool

Yum, a delicious tuna salad with avocado and celery!

I like to mix half Greek yogurt with half mayo ratio to cut the fat grams. And other times, just good old homemade mayo.

I agree, it's really cool to have fresh from the garden foods delivered to your door.

Thanks for sharing !

Peace.
