It's Sunday: we cooked PAELLA!
It is a family tradition to eat paella on Sundays, whenever I have time I love to cook it. I use the family recipe that I am going to share with you today.
Each paella has its own personality and none tastes the same as the previous one and each family or cook uses their own recipe and their tricks...
I can not always go fishing, luckily the professionals do and in the market I always find the best fresh fish!
so once we have the seafood...

what we need?
Seafood:
Norway lobster (3 per person)
Prawns (4 per person)
Mussels (6 per person)
Clams (6 per person)
Cuttlefish (1 big)
Vegetables:
Tomatoes (2)
green pepper (2)
onion (1/2)
Garlic (2 heads)
Others:
fumet (the main secret ingredient, is a broth made with rock fish)
Salt
olive oil
Rice
We cut the vegetables and grate the tomato
We start frying the seafood in the paella (this casserole receives the same name as the dish: paella) once it is golden remove it and very slowly add the garlic, when the garlic is golden add the onion when it is browned add the green pepper and the cuttlefish finally the grated tomato.
In another fire we open the mussels and clams to the steam, we will keep the liquid that they release
This part known as "sofregit", is the most important, remember over low heat and giving your time to each ingredient
Once it looks like this, the sofregit is ready!
It is time to add the "fumet" in my house the fumet is made with the remains of the fish that I fish (a delight), it would be the perfect broth for a fish soup.
We made 3 cups of fumet for each cup of rice
We increase the power of fire and once the fumet boils it is time to throw the rice and immediately the rest of things! we leave it to fire quickly between 15 and 20 minutes
It's time to call everyone to the table! the paella is almost ready!
Accompanied with a cava or champagne or wine or cocacola or water or without a drink !! the paella is a spectacular dish
the paella is a unique dish but we always have a good dessert
Cream and truffle fish !!!
