Coconut cupcakes

The best recipe for coconut muffins! Muffins with real butter and coconut flakes emerge perfectly fluffy and moist. It's a delicious dessert every day and for special occasions like a wedding and Holy Communion.

Number of servings: 10 large cupcakes

Ingredients for coconut muffins

  • butter cube - 200 g
  • a glass of wheat flour - 180 g
  • half a glass of sugar - 130 g
  • 4 medium eggs
  • a glass of coconut flakes - 100 g
  • 2 spoons of baking powder

Ingredients for a cream cream

  • half a glass of sweet cream 30% - 150 g
  • 3 tablespoons of sugar

How to make coconut muffins:
Mix wheat flour together with coconut and baking powder. The wheat flour will be the best for these coconut muffins, but I made them also from the Poznań wheat flour and everything has grown great.

Put eggs and sugar in the mixer bowl. Eggs beat with sugar for fluffy and light foam. Sugar should completely dissolve in the cream. Whip eggs with sugar for not less than 4 minutes - at the highest speed of the mixer. I recommend sugar with a small refinement, which merges faster with eggs.

Pour the melted and chilled butter into beaten, dried and light egg and sugar foam. Mix briefly with the foam and then pour a mixture of flour, shavings and baking powder. Using a spatula or spoon, carefully mix the whole into a homogeneous mass. Mix the dough briefly, only to combine the ingredients.

Put the dough into the muffins. I used high and stiff cups with a diameter of 6 cm at the bottom and I got 10 cupcakes. If you have smaller hair curlers, you will get a minimum of 12 cupcakes. When putting the dough in the staplers, remember to place it no more than 3/4 height of the paper cutters. The muffins will grow quite a lot.

If you have soft hair curlers, remember to put them in the holes of the metal cupcake mold (cupcake). Otherwise, the cake will pushing the paper and the muffins will not look good.
hair curlers 6-8 cm will come out 10-12 pieces - up to 30 minutes of baking
hair curlers 3-5 cm will come out 12-14 pieces - up to 25 minutes of baking

Put the ready-made muffins in the oven preheated to 170 degrees. Baking option - up / down, middle shelf. Cupcakes bake 25-30 minutes, the so-called dry stick. At a higher temperature, muffins can grow too quickly and spill out of the hair curlers. After baking, open a little of the oven door. After 10 minutes, open the oven and take out the muffins after a while.

Chilled muffins can be decorated with whipped cream and Raffaello.

Whipped cream for coconut muffins
Put the chilled cream in a high container. Hit with the mixer starting from the smallest speed. When the cream begins to slightly thicken, gradually increase the mixer's speed. Add one tablespoon of sugar and whip the cream at the highest speed until the sugar dissolves completely. Add a second spoon and beat further to combine the sugar with the cream. After a few minutes of whipping, a thick white cream should be created.

Whip the whipped cream into cupcakes using a confectionery sleeve with your favorite tassel or cut off sleeve. Raffaello balls can be added to whipped cream. Decorated muffins should be kept in the fridge.
