UNRIPE PLANTAIN PORTAGE.
plantain when ripe, we know is delicious 😋 when either fried or cooked.
But have you ever done something ()beautiful with an unripe plantain?
Here is how my sister, her friend and I did it today Monday as dinner
Ingredients for the preparation
- Bunch of unripe plantains(depending on how much you want to eat)
- A big bunch of pumpkin leaves
- 1 medium fish (Mackerel)
- 1 medium kpomo (cow 🐮 skin)
- 1-2 teaspoons ground crayfish
- 2 medium onions
- Red palm Oil: enough to colour the meal
- Pepper and Salt (to taste)
- 2 big stock cubes. ( we made use of Maggi)
Directions of preparation
First the bunch of unripe plantains (green colour), was gotten from a near by market.
Peeled off the body or cover and make do with the inner content, then placed in a clean plate,
Diced into tiny pieces with the help of a knife 🔪 and a chopping board.
The pumpkin leave was chopped as well and placed in a separate bowl, likewise into another small plate, the onion
The cut plantain is then placed in a pot.
Add the chopped onions, stock cubes, fish, ground crayfish and pepper.
Water is then added to the same level as the contents of the pot.
Cook till the contents start to boil.
Red palm oil and salt is added to taste.
The pot was then covered and kept cooking till done. This is when the plantain is tender to touch.
Once this is observed, the vegetables are added, cover the pot and left to simmer.
Once heated up, it was stirred properly, then brought down, allowed to cool before serving.
