Rediscovering Korea's premium spirits HWAYO
HWAYO is a brand that pioneered premium rice spirits market in Korea. It has been a long time since I established a corporation in December 2003. Although it is a leading company, there are still people who do not know about HWAYO brand. As of 2015, it is about 11 billion won in sales, but it is not big yet. For this reason, many experts believe that the market for rice spirits is highly likely to grow.
HWAYO is a character made by dividing one Chinese character(燒) into two.
The manner of drinking is not so different from other Korean spirits. It is a way to brew makgeolli, to distill and to drink. It uses distillation equipment and is distilled at about 40 degrees. HWAYO is said to have chosen decompression because it wanted to emphasize the softness of the product concept. Of course, as the production scale is large, if you choose the atmospheric pressure method, the cost will increase. Compared to other Korean spirits, HWAYO hardly feels spicy. You can feel a very soft twist.
One of the most impressive of the HWAYO production facilities was Onggi(Korean earthenware) for aging. There are about 400 pots placed in the underground aging room. It is about 350 to 400 liters of capacity. It is said that Onggi was made in China, but there was no place in Korea that could make this kind of scale. So I took the soil from Yeoju and made Onggi in China.
