My weekly contenders for @foodfightfriday have seemed to evolve into a weekly #food and #travel blog—ahhhh, shucks! Our 30 day stay at this location is over at the end of the weekend, our next stop is the one where we hop over into Panama—we’re looking forward to that. @puravidaville has been busy all day handling the details for us in between laying out by the pool, feeding us, and watching recipes—swamped! So, I’ll be representing both of us tonight at kitchen #fff. I told her, “I hope they don’t think I’m rubbing a plate of paradise pie in their face by telling them about the pool or picturing these meals every week with a backdrop suitable for a magazine cover.” So, I have an idea... Humble Pie!

Puradays would like to take this opportunity to clear the air—our intention is not to rub a piece of paradise pie into your face or into anything else each time we picture a falafel pita in various beach towns, fresh caught fish that’s grilled to perfection, picked veggies from the side of the road, home-grown spices at the local farmers market, Pura Vida’s homemade masterpieces, delicious protein shakes from street vendors, pineapple right off the plant, raspberries from the bush—nope! No paradise pie at all, they’re just meals, something to hold us over until we get hungry again. 😉

Breakfast some time this week. I think it was Tuesday, 🤔 I’m pretty sure it wasn’t Monday. Dairy free French toast with fresh raspberry jam and ice cold maple syrup with a side of potatoes, pico de gallo, two sides of fruit and a coffee/water combo at The Beach House—a seaside restaurant with live entertainment on the weekends in Playa Potrero:

Yesterday’s lunch, this would’ve been Thursday. Grilled shrimp, lettuce and a fridge full of vegetables, in-house tahini and “Callejero fries” which are real similar to Pik Nik’s wrapped in a Pita with a side of French fries at El Callejero—a food truck style vendor in Liberia:

Breakfast earlier this week, if The Beach House was Monday then this might have been Tuesday. Pura Vida made pancakes—the ingredients vary each time but she’s pretty sure these ones had banana, oats, cinnamon, coffee, protein powder and water, topped with homemade peanut butter, macadamia nuts and agave. Location—the table on the front porch.

I don’t remember what day she made this next one, it’s a dessert, it might’ve been the same day as the pancakes, whatever day that was. 🤔 Sugar-free zucchini bread: Zucchini, coconut flour, egg whites, cinnamon and a dash of stevia—topped with sliced pears, strawberries and more cinnamon. Location—the table in the kitchen:

I’m not sure where I got this next one from, it was a restaurant around here somewhere, probably in Tamarindo. I’m not sure what day it was, either, I know it wasn’t yesterday, I do remember thinking “danget!” After I realized I took a bite before taking a picture: Mediterranean style falafel pita with hummus, chopped cucumber, carrots, lettuce, onion, I’m making this up—I’m sure those ingredients were in there, most likely they were, I think it had beats and cabbage, too, I’m just not 100% certain. It came with a side of French fries, I’m sure they were fresh and salted. iheart falafel—“guilty!” Location—somewhere around here:

This next one is from today, Friday, I’m positive. I just made it this morning—it’s my pre-train shake. About 12 ounces of water, 28 grams of protein, 50 grams of carbohydrates, 10’ish strawberries from the side of the road, two frozen bananas and about a 1/2 cup of spinach from the fruit stand down the street from Perlas, a local karaoke bar in Playa Potrero. Location—the table on the front porch:

Nahhh.. Between the cycling, swimming and weight training, wolfhart, you’ll have a tough time keeping the 20 on. Waterfalls, rivers, etc. enjoying the sights and putting on miles—your exercise level will require all of that food for all of the energy you’re going to burn up. Ed was right—pure muscle! Try not to hurt yourself when you show off your guns. 💪🏼 😉

I’ll have to get back to you whether the coffee was cooked or not, that’s acfually a real good question and I’m kinda surprised I don’t know the answer. She’s always feeding me such great meals, I used to be able to make my way around a kitchen quite well, since I’ve met her, she made sure to squash all of that.

Howdy sir dandays! Oh the coffee was regular coffee, could you taste it in the pancakes? That sounds like it would make a good flavoring but this was an experiment right? I mean, she makes so many original dishes and then you guys find out if they taste good and if it's good you post them, or she posts them. Right?

Mrs. J doesn't work this weekend, not sure what the schedule is, if it doesn't rain I'll be mowing quite a bit and she will be finishing our taxes, yuck!

Down there you don't have to file anything for taxes or what do they have down there?

I don't think autofiring you would have any effect on our engagement and I appreciate your concerns but you're probably stuck with me for the long term or until steemit collapses. lol. Several people have severe doubts about it so we'll see!

Nah, you couldn’t taste it. It’s just the combination of it, the fruit, the agave, etc. that tastes good. Pretty much everything she makes is an experiment, you’re right. Often times she’ll be “danget! I wish I would’ve written it down” when something is perfect. There’s a rare one here and there that aren’t perfect, she expects that. Not too often, though, I’d guess maybe 1 out of 15 aren’t delicious—nothing gets thrown out.

Ah, taxes, what a treat! Yes, I still have to pay, there’s a clause about being abroad for two years, though. Liability is 12% of “up to” 100% earned income and once you’re abroad two years your filing status changes to 7% of “up to” 80% earned income. Can you see the difference in value there? It’s pretty substantial and the key is up to. Simple math, on 1k, 12% of that is $120. “Up to” 80% of 1k is is $800. 7% of $800 is $56. $56 vs $120, You’re cutting your obligations by more than 50%.

I’ve maintained a Nevada address for a long time—no state taxes there.

As far as taxes, do you owe taxes on the income from the innuities?

Yeah with steemit..there are so many good things being tried and that people are working on that they just might make it. I think they will. I give them a 75% chance of succeeding based on nothing at all except my impressions. lol. It's still somewhat of a gamble. But I think the ods are improving all the time.

Annuities, right? I’m not drawing anything from my annuity, it will remain in a brokerage until I’m 62 to avoid paying. Unless I die then Pura Vida gets it all and she’ll have to pay the taxes.

I do have to file taxes, though, I’m done already, free and clear of 2018. Part of the two years, two weeks and five weeks it took to leave the country was clearing my name with the Feds. They don’t owe me and I don’t owe them—free and clear!

I’ve been doing some extensive research lately as far as crime stats, cost of living, where Pura Vida can make a decent wage, etc. and I found a few more places we’re considering:
Taiwan. Malta. New Zealand. Japan. Acapulco.

And, actually, everything I’m finding out about Taiwan online has bumped the country into my new top 5 I think, probably ahead of Tahiti.

The behind the scenes clips of Pura Vida would impress you, for real! We’ve been on gas, propane, now an electric stove, she’s wingin it the whole time—rockstar. The utensils are always different, power goes in and out etc. Take it from a dishes-do’er, just different size kitchen sinks is an obstacle. 😉
