🍪 Recipe: Delicious Home Made Cookies
It's been 31/2 years since I last wrote about food and in that time, I have eaten a lot of food but chosen not to write about it. Just like I choose not to write about brushing my teeth after I've found my teeth cleaning brush. But it's something that I do. Twice a day.
And sometimes, I make yummy things. Like cookies. Which are super easy to make.
Ok, so they don't look great but that's how you know that they taste great. And boy, do these taste good!
Ingredients - Makes About 18

190g | Plain (all-purpose) Flour |
1/2 tsp | Bicarbonate of Soda |
1/4 tsp | Fine Sea Salt |
115g | Unsalted Butter (soft - at room temperature) |
50g | Granulated Sugar |
125g | Light Brown Sugar |
1 tsp | Vanilla Extract (or Paste) |
1 | Large Egg |
170g | Chocolate Chips |
Disclaimer: This recipe was inspired by somebody else’s that I printed off years ago and can’t find anymore.
Notes
- I don't like much salt in my cookies so you could reduce this quantity.
- Vanilla Paste is stronger than Vanilla Extract so I prefer it.
- This recipe didn't use Chocolate Chips. I used 4 x Wispa Gold broken up.
Steps
1. Mix up most of the stuff
The original recipe has you mix the flour, bicarbonate of soda and salt in one bowl and butter and sugars in another bowl before combining. Then adding the vanilla and eggs.
I like to minimise washing up so I put everything apart from the chocolate in a bowl and then mix it until it's creamy. This is much easier if your butter's soft and can take ages if it's not.
Once you've done that, mix in the chocolate.
This'll give you an already tasty cookie dough.
2. Put dollops (about 1 to 2 tbsp per cookie) on some greaseproof paper
Don't worry about how messy they are - just space them out enough because they spread out as they cook. I tend to cook 6 at a time.
3. Cook them
Most recipes will tell you to pre-heat the oven an hour before you need it but not me. Your oven does need to be preheated though - to 180oC.
Whack them in and cook for about 8-9 minutes. When they come out, they'll still be soft but don't worry, they'll harden up as they cool. If you like your cookies to be rock hard, cook them for longer. I like mine to be on the softer side.
Remove them from the baking tray and transfer to a wire rack to cool. Repeat until all the mixture is used up.
4. Turn your oven off
There's no point leaving it on unless you've got one of those AGA things or you're cooking something else.
5. Eat them

Eat them quick because if anybody else tries them, they won't stop at just one.
This is also an opportunity to tell your partner that they can't have any unless they do the washing up.
6. Brush your teeth
You've eaten a lot of sugar and probably don't want your teeth to rot. So find your toothbrush and toothpaste and give them a thorough clean.
