Wow, I just love this post- sorry I am writing this response so late (I got my vote in on time though!) it but you are so right! Everyone thinks it's impossible or too difficult to eat vegan but that could not be further from the truth. Anything can be made using alternative ingredients, it's just not reasonable to think it can't =D I make everything I used to love back before I changed my diet and have had wild success at it, loving the new recipes more and feeling better after eating them! I am so happy to see this post be catered toward Indian food because Indian food is my favorite and I am a nightmare at a restaurant asking for so many food substitutions ;)
This is a great post, I think it will open many eyes, ears and mouths to the possibility of giving these foods a try! <3

Good to know that you love Indian food. Yes, anything can be made using plant-based ingredients as all taste lies in plant-based ingredients only, not in ANY animal product. We always feel better when we make recipes using all plant based ingredients. Let everyone enjoy these recipes!
