SLC-s 23/week#2 Exploring the global cuisine(Afghan cuisine)

Welcome to my belog .How are you all .I am @roohiasif99 from Pakistan.I hope you fine too.Today here I am participating SLC-s23/week#Exploring the global cuisine(Afghan cuisine)This very wonderful and unique learning challenge .Throw this plate form I had learn many more dishes.because I am cooking lover .it's my passion .Today I had share a wonderful authentic recipe of Afghan cuisine (Afghani pulo)I am very Thankful for [email protected] was arranging such a beautiful contest for us and Thankful for whole steemit learning team to giving me a chance to bring my abilities.
Let's move towards and starts.
What was new for from the course,any spice or cooking technique or thing that want to share?
I made a lot of pulao at my home, sometimes of chicken, sometimes of beef, sometimes of mutton, sometimes of lamb.but now Today new Things is that using dry fruits and carrot and not without
coriander and fennel.The best thing I found was a very great beef stock made without fennel and without coriander seeds.A very tasty Afghan Pulao is made with the few ingredients.Even tomato curd was not added to it, it still turned out very tasty.A lot of ingredients are usually added to enhance the pulao test to bring out the flavor.aroma and taste is fantastic👍
Does your cousin have a dish similar to the recipe share?
Yes,of course Pakistani pulo is very delicious and famous dish similar from this recipe. it's compulsory in our cuisine. a part from this mixed rice and meat famous dish of biryani and sindhi biryani. Beef, chicken ,lamp ,goat yakhni pulo and mutangan is similar of this recipe.because in mutangan add some nuts ( This dish sweet and salty).and chana pulo.

Afghan pulo

Rice | 750 Gm |
Oil | 1 cup |
Salt | 2 table spoon |
Cumine seeds | 1 table spoon |
Black paper | two table spoon |
Onion | 2 big size |
Green chilli | 4/5 |
Black rising | two table spoon |
Almond | 4/5 |
Carrot | Cut in thin size 4 table spoon |
Sugar | 1 table spoon |
Ginger,garlic paste | 1 table spoon |
procedure
Wash the beef meat properly .cut the onion thin slice in cutting board.then heat the oil in pen .add onion slices. Add cumine seeds,bay leaves ,

Frying the onion and spices then add meat in pen .then frying untill the colour of meat change golden brown.then add ginger garlic paste ,salt,black paper ,green chilli,frying two to three minutes when the smell of meat removed .

Add water in pen .covered it for 2 hours then meat were tenders.Water should be added to the meat so that tender.

Wash the rice two to three time .then soak the water in rice about 20/. 25 minutes . I am using Quality of banaspaty rice.because my family like banaspaty rice.

Wash and cut the carrot in juline size .and the other hand soak the water in black rising then boiled almond for 10 minutes .

Heat the oil in pen .put carrot in pen .frying two to three minutes then Remove black raisins from water and dry them in oil. after that peel of skin of olmands and one table spoon of sugar and add in pen then frying in pen .then cermalize all the mixture.Then I set the pan aside to cool.

When meat tender properly .in the other pen I add beef stock.then in meat tender I add black paper,green chilli,dry mint leaves .then add a rice .Rice that is pre-soaked will absorb less water.then add all the beef stock and add the salt.When the rice water dries up, leaves the rice to simmer on low heat .

Add sugar caramelized in rice.mix well properly .now my Afghan pulo ready to serve .
The result was amazing👍👍 marvellous.The aroma is spread all over my house.The taste is very unique and presentable dish.Thanks for mam suboohi to giving me a chance enhance my abilities .
This was very unique taste. My whole family like this pulo.and my son told me mom you have made again tomorrow.Thsnks for steemit team and mam suboohi.I think this series should continue so that we can learn many new things.

Gosh.. Your cuisine looks very good. As a Pakistani you have almost the same culinary as the Afghan people. And some of the ingredients needed are also easy for you to get
