Monday Breakfast Delight: Yam, Plantain, and Egg Sauce Recipe. [17:02:2025]

Yesterday, I treated myself and my family to a hearty and delicious breakfast, showcasing the rich flavours of Nigeria's staple ingredients. The star of the show was a mouthwatering combination of boiled yam, plantain, and egg sauce.


🍜 INGREDIENTS USED🍜👇🏾
⚪️ 2 tubers of medium sized yam
⚪️ 2 unripe plantains
⚪️ 5 eggs
⚪️ Vegetable oil
⚪️ Fresh pepper chopped
⚪️ Onions chopped
⚪️ Fresh tomatoes chopped
⚪️ Salt

First of all, I washed, peeled, and chopped the yams and plantains. Placed them in a large pot, added enough water to cover them, and brought to a boil. Then, I reduced the heat to medium-low and simmer until they were tendered when I pierced with a fork.

The yam, a staple in Nigerian cuisine, was cooked to perfection. Its firm texture and subtle sweetness provided a delightful base for the meal. The plantain, with its proteinous and sweetness characteristic, added a nice contrast to the savory yam.

Next was the preparation of egg sauce. I blended the chopped onion, tomatoes, and fresh pepper until they were smooth. I then heat the vegetable oil in a pan over medium heat, before I poured the blended mixture into the skillet and sauté for 7 minutes, I stirred occasionally, until the mixture was thicken slightly.

Next I added spices and salt into the cracked eggs, and stirred to mix well for a delicious taste and scramble them into the skillet and increased the heat and stirred it to mix with the vegetable oil and other ingredients.

The eggs sauce, boiled to a perfect doneness, brought a satisfying protein boost to the dish. This simple yet satisfying breakfast highlighted the beauty of Nigerian cuisine, where humble ingredients come together to create a flavorful and nourishing meal.

Finally, I served the egg sauce with the boiled yams and plantains, and ate satisfactorily with my family.
