Eggplants are must!

Eggplants ,also called aubergines belong in the same family as tomato,and peppers they have the consistency of a tomatoe when blended and can be added to stew,it tastes very nice, it is native to India, eggplant cannot be eaten raw as it has a somewhat bitter taste and is of astringent quality, but when cooked develops a unique and delicious flavor eggplants are darkpurple,although there are other variations like white,aubergines are glossy and somewhat shaped like a teardrop.eggplants are very sensitive to cold and so should be raised in a nursery for 21 days then transplanted to a fertilized soil,soak seeds to encourage germination ,pick an eggplant between 6-8 inches long, the skin should be glossy and thin ,late harvested plants are spongy,bitter and not tasty harvesting is at 16-24 weeks.
