Whisky Production
Single farm locally grown English barley.
The London based Bimber distillery carefully selects spring English barley varieties to produce their premium single malt whisky.
Traditional floor malting.
Bimber believes that floor malted barley is essential for the production of handcrafted, high quality whisky. This is why this distillery partnered with Britain’s oldest maltster who dedicated an entire malting floor solely to Bimber.
Air-dried barley.
All sugars required for producing alcohol come from the barley that is dried over hot air to stop the germination. The barley is then crushed and transported to the distillery itself.
Mashing and fermentation.
Bimber adds hot water to the crushed barley in the mash tun which helps to convert the starches into sugars and results in a liquid called wort. The wort is particularly clear so it produces a new make spirit which has less intense cereal character.
Distillation.
Bimber heats their stills in the traditional way with direct fire rather than steam which enables them to distil slowly and powerfully for a full-bodied spirit with excellent depth of flavour.
Aging, on site cooperage.
Bimber has their own on-site coopers who assess, repair and re-char the casks.
Bottling.
The process of blending a single malt is complex and highly skilled. Bimber monitors the progress of each cask, tasting its precious contents regularly to choose the right time to bottle the whisky.

Oh, I've been to tastings in Irish and Scottish distilleries - but in the centre of London...? That's crazy.
It’s a great thing to do here, second time we’ve done it this year. The entire experience is much more personal compared to the big distilleries in Scotland. Plus the quality of their whisky is outstanding, over 50% ABV and they remove the methanol during the distilling process which is something the big guys don’t bother doing. As a result you don’t get a methanol poisoning, no headache, the alcohol doesn’t burn your throat. Cheers 🥃

Oh, what a Russian does not like whiskey!)) Thank you very much for such an informative trip to the distillery. Single malt whiskey is very expensive and massively blended varieties are sold here.
I envy you kindly that you were able to see the process of preparing whiskey, as well as taste it))
